CE LA VI Hong  Kong opens as the jewel in the crown of the newly  reborn California Tower in Lan Kwai Fong. Occupying the top three  floors of the striking building, it includes the stunning open-air SkyBar featuring tropical gardens and  a rooftop  jacuzzi  with  360-degree views  of Hong  Kong·s iconic skyline, a Club Lounge and a Restaurant.

CE LA VI Hong Kong marks the  first  step in a global expansion plan for the new brand that aims to create a group of glamorous international restaurants and  nightspots in key cities around the world.

The stunning new venue has been conceived  by leading Hong  Kong  design  firm AB Concept  and styled  to represent a tropical rainforest allowing guests  to escape to a magical world away from the concrete jungle  below. Motifs  of the Southeast  Asian-themed landscape occur  throughout the venue, using  shadow  and  textures   to  masterfully  create  a  seductive, intimate  and  sensual atmosphere.

At the arrival, Asian temple discs  in the  brand’s signature red colour and a long  raw-cut wooden table hand-picked from Bali deliver a rustic tropical beauty, while  outdoor materials such as wood decking, beige  textured stone  and mosaic  patterns are  used  in the SkyBar  to  reinforce its  rustic edge. Exotic materials Like raw porous Lava stone and raw ship wood are used around the venue.

The soul of the  restaurant Lies in  the  dramatic custom-designed green  chandeliers overflowing with exotic  plants  and wallsconces filled with  greenery and mother of pearl flower pots. Dine atop tables that  feature exotic  bird  feathers recessed   under  the  glass.  The Club  Lounge  features a stunning vertical garden  and  a spectacular ceiling-high live  green  pillar, furnished with  antique mirrors, drop candles   and  a  bespoke   Tai  Ping  custom-designed carpet. The  rooftop  SkyBar similarly embraces a Lush Landscape: with a jacuzzi as a unique  centrepiece of the SkyBar, an elite space has been created for the city ‘ s well-heeled to experience the stunning skyline of Hong Kong.

CE LA VI Hong Kong, Like its  sister  venue in Singapore, provides a globe-spanning,  Modern Asian cuisine  in  a  spectacular  setting,  where  dishes   are   prepared  artistically  and   dramatically presented. Executive  Pastry  Chef Jason  Licker, who has created  his legendary desserts in some  of the most celebrated venues  globally. As a master patissier, Jason  has  a diverse  background of projects, experiences and  collaborations that  have evolved  his pastry  style  into  the  perfect last  bite. Fresh from his crowning as the champion of desserts at Iron  Chef Thailand, Jason has worked in some of the  top kitchens in the world including the JW Marriott Hong  Kong,  Nobu  Miami  Beach and three Michelin-starred Jean Georges in New York. At CE LA VI Hong Kong, Jason willbe providing diners with visually stunning and unpredictable creations all dripping  in  decadence to provide the ultimate after dinner dessert with a twist.

In addition, CE LA VI Hong Kong has an award-winning Mixology programme, with  impossibly chic concoctions with  a distinctively refreshing Modern  Asian  philosophy helmed by two  masterminds, Knut  Randhem and  Fabien  Marcault. Swedish-born CE LA VI’s  Regional Head  Mixologist  Knut Randhem   has   spent   over   10  years   honing   the   art   of  bartending  including  the   Bella   Sky, Copenhagen’s most  reputed hotel and  “Ourselves Alone”  bar,  rated  Europe’s top  50 bars,  and most recently judged  the  Diageo  World  Class  Thailand 2014.  Meanwhile, Bar  Manager   Fabien Marcault has  polished his  craft  at  several of  the  most  iconic  and  award  winning  nightspots in London  and Hong  Kong. Together, they  have worked on an array  of cocktails that  are  attuned to Asian climes and befitting of the pinnacle of Lan Kwai Fong.

CE LA  VI Hong  Kong’s  signature cocktails include ‘This  is the  Life,’   composed   of  pear  puree, hibiscus water, rosehip cordial, peach  liqueur and an extravagant splash  of bubbles. The ‘Bloody Old Fashion’  is a fiery take  on the classic  with  Michter’s rye bourbon, Frangelico, dash of aromatic bitters, chilli and  cashew  syrup  and  topped  with   freshly squeezed   blood  orange. Also  on the signature cocktail list  are  CE LA VI ‘s  international favourites, the  ‘Storm Cooler’ and  ‘CE LA VI Negroni’, which have taken  Singapore  by storm.
