At Summer Pavilion, Executive Chinese Chef Cheung Siu Kong presents these delicious autumnal crustaceans using modest cooking methods such as steaming and braising, which enhance the natural flavours of the hairy crabs. Highlights on the à la carte menu include braised superior bird’s nest with hairy crab roe and steamed hairy crab.
The steamed hairy crab is a simple but classic dish where the natural sweetness of the crab meat melds perfectly with the rich flavour of the crab roe. Hairy crabs are traditionally believed to have a “cooling effect” on the body and this dish is thoughtfully accompanied by a cup of homemade ginger tea, which helps warm the body to achieve perfect balance.
