Savour true Italian cuisine mastery with One-Michelin-Star Guest Chef Roberto Rispoli who will showcase a specially curated 4-course menu perfectly paired with wines from Tenuta di Trinoro. The evening has been jointly curated by Stéphanie Rigourd, Wine Director of Raffles Singapore and Andrea Franchetti, founder of Tenuta di Trinoro amidst the colonial elegance of Raffles Grill on Wednesday, 18th May 2016.

 Chef Rispoli will also be showcasing his signature dishes for lunch and dinner exclusively from 17th to 21st May at Raffles Grill.

Chef Roberto Rispoli has been at the helm of Il Carpaccio since the reopening of Le Royal Monceau – Raffles Paris in 2010. Drawing on his Southern Italian heritage, Roberto Rispoli’s dishes sing with the taste of excellent regional produce and the natural flavours of carefully selected ingredients. In 2013, he was awarded his first Michelin star.

Roberto Rispoli was born in 1981 in Pompeii, near Naples. He discovered his lifelong passion for cooking at an early age. When he was 16, he joined a small family restaurant, where he was introduced to the rich flavor palette of his native region. At 17, he left Italy to gain some valuable experience abroad, first in France, then in the Czech Republic, and finally in Switzerland. He landed his first position as Chef de Partie at restaurant Il Padrino in Lucerne, where legendary Chef Auguste Escoffier headed the kitchen decades earlier.

Getting homesick, Roberto moved back to Italy in 2006, working as Chef de Partie at the Don Alfonso, in the Tramontano Hotel in Sorrento. His appointment at Alain Ducasse’s La Trattoria Toscana, in the exclusive Andama Hotel, was a turning point in his career. There, he started working with the very best seasonal products, with recipes reflecting the rich diversity of Italian cuisine. Very quickly, he showed the full extent of his talent and within three years, he was promoted to Sous-Chef.

In 2010, Laurent André, Executive Chef at Le Royal Monceau – Raffles Paris, invited him to join to soon-toreopen iconic palace and breathe new life into its historical Italian restaurant, Il Carpaccio. There, Roberto Rispoli has created a menu inspired by the family traditions of his native country, laying emphasis on conviviality, simplicity and the pleasure of sharing food.

Some of his signature dishes include a roasted lobster in Barolo wine sauce, with wild mushrooms and rosemary Buffalo milk’s cheese mozzarella; a Sardinian pasta soup, with spider crab, saffron and winter vegetables; Tagliolini pasta with sea urchins, wild fennel pesto, croutons and anchovies; and braised veal Ossobuco with “Gremolata” sauce and black truffle polenta. His very personal interpretation of Italian cuisine earned him his first Michelin star in 2013.
