In celebration of Bourbon Heritage Month in September, The Bird Southern Table & Bar has launched a special tasting menu showcasing the brilliance of Southern Bourbons paired with the restaurant’s delectable cuisine.
The bourbons will be available for the month of September in the form of three-, four- of five-flights or as cocktail-style paired with a 4-course tasting menu.
Marina Bay Sands has teamed up with 50 Eggs to unveil its first international location of the James Beard nominated and award-winning Yardbird Southern Table & Bar, operating under the name The Bird Southern Table & Bar. A tribute to Southern hospitality and farm-fresh ingredients, The Bird enhances the integrated resort’s diverse range of signature restaurants and casual dining options.
Hailing from the United States, 50 Eggs Inc. was founded by renowned restaurateur John Kunkel, who owns and operates some of Miami’s most popular restaurants, such as the award-winning Yardbird Southern Table & Bar, Swine Southern Table & Bar and Spring Chicken. Kunkel also owns and operates a second Yardbird Southern Table & Bar on restaurant row at the Venetian Hotel Las Vegas, in addition to his newest concept Chica,located right next door.

Located at the South Promenade of The Shoppes at Marina Bay Sands and set against the scenic Marina Bay waterfront, the 190-seater two-storey restaurant serves Southern U.S. classic dishes, including the famous 100-year-old recipe Lewellyn’s Fine Fried Chicken, Shrimp ‘N’ Grits, Buttermilk Biscuits, and Butter Lettuce and Grilled Mango Salad.
Amongst the classic southern favorites, The Bird has also included as part of their menu, a Singapore-exclusive dish with an inventive spin on local cuisine–the Low Country Laksa.
This dish features a skin-on snapper filet, served with Carolina gold rice pirlau, a heritage rice grain that is indigenous to South Carolina, enhanced with sweet corn and spiced pecans served with a crispy poached farm egg and a caramelized ginger and coconut broth. This dish was inspired by Kunkel’s travels to Singapore and combined with traditional southern ingredients and techniques.
Following suit to its US counterpart Yardbird Southern Table & Bar, The Bird’s extensive beverage program serves the highest quality hand-crafted cocktails, including Blackberry Bourbon Lemonade, The Bird’s Old Fashioned with Bacon Infused Bourbon, and the Watermelon Sling – alongside cocktails reflective of the Singapore culture such as The Ong Bak, The Sloe Plum Shrubble and The Japanese Porkchop, made with Yamazaki 12yr, dijon mustard, Marugoto Shibori Yuzu, unfiltered apple cider and fresh thyme.
The Bird will also boast one of Asia’s most impressive selections of bourbon and many sought-after spirits from around the globe. Among the multitude of signature bourbon options, guests will discover rare favorites such as Pappy Van Winkle, Jefferson’s Aged at Sea and rare expressions of Blanton’s.
Inspired by the Southern United States, The Bird incorporates modern-rustic design with industrial touches. The restaurant uses familiar textures and colors signature to its flagship location, including accents of reclaimed wood, recycled machinery parts and mason jars, while incorporating additional greenery and live plants unique to the cultural roots of the signature Singapore gardens.
Diners can expect to bask in a lively atmosphere amongst alfresco seating, vibrant bar settings, and a bustling open kitchen. Guests looking for a perfect spot to host intimate events can also choose between a private dining room that can be configured into two rooms for 6 to 10 people, and a 30-seater semi-private dining room.
Open from 11am to 2am daily, The Bird offers lunch (11am to 4pm), dinner (4pm to 2am), and a signature weekend brunch (10am to 4pm).
