The Flying Sommelier Tour



CÉ LA VI, Pollen and Salt Grill & SkyBar unite to create the ultimate wine and dine experience

Three of Singapore’s top-tier restaurants are coming together to collaborate on a unique sensory adventure with a portion of the proceeds going to the Society for the Physically Disabled. Known as the Flying Sommelier Tour, CÉ LA VI, Pollen and Salt Grill & SkyBar will be presenting a series of exclusive soirees sure to tickle the taste buds of serious oenophiles.

Over the course of three exclusive nights in the next three months, the establishments’ sprightly sommeliers, Michael Leitner (CÉ LA VI), Amir Solay (Pollen) and Fazil Mohammad (Salt Grill & SkyBar) will play host and select their favourite wines that are best enjoyed with the impeccable 5-course meals for each night.

These exclusive soirees will be accompanied by an auction featuring rare and exclusive bottles of wine handpicked by each of the sommeliers. All wines served during the dinner will also be available for on-site purchase. Proceeds from the auction and a portion of the on-site sales will also be donated to the Society for the Physically Disabled.

Amir Solay kicks off the Tour at Pollen on 21 March, pairing dishes like the South Coast langoustine, smoked mussels in pine, eggplant and langoustine cream, with an Inima Du Lot Soave Classico, 2010/2011 – Veneto Italy. Salt Grill & SkyBar’s Fazil Mohammad promises diners a gastronomic journey on 18 April, with the Pigeon, roast breast, confit leg, beetroot puree and chocolate jalapeno sauce beautifully paired with the Mt Difficulty Target Gully Pinot Noir, 2009 – Central Otago, New Zealand.

Michael Leitner hosts the finale of the Flying Sommelier Tour at CÉ LA VI on 23 May with a Modern Asian 5-course wine and dine extravaganza. One of Leitner’s favourite pairings for the night is the Stonier KBS Chardonnay, 2010 – Mornington Peninsula, Australia, with the Pan-Fried Red Mullet with chickpea chips, parma ham crumb, wakame and saffron sauce.
